They say that the quality of a recipe for the health is measured by the amount of colors in the dish. So try this colourful salad, light in calories and complexity, good in taste and health.
Spinach, berries and goat's cheese salad
1 tablespoon of raspberry vinegar
2 tablespoons olive oil
Salt and pepper
1 medium red onion
200g of goat cheese
1/2 cup pecan nuts
100g of spinach leaves
75g of Beirabaga gooseberries
75g of Beirabaga raspberries
1 Put the raspberry vinegar in a salad bowl with the olive oil and some salt and pepper. Add the sliced onion and mix.
2 Cut the goat’s cheese into bite-size pieces, place them on a baking tray, scatter with the flaked almonds and pop under a hot grill for about 4 minutes, or until the cheese has slightly melted and the nuts are golden brown.
3 Add the spinach and the berries to the bowl containing the onion and dressing. Toss gently, top with the warm goat’s cheese and almonds, then serve immediately.
